Southern Potato Egg Salad

This secret family recipe is an Easter tradition in our household. Follow these easy steps to create a new tradition of your own.

Easter Recipes and Ideas

Southern Potato Egg Salad Ingredients:

  • 4-5 large potatoes, peeled, cubed
  • 1 tsp.  salt
  • 10-12  hard-boiled eggs, chopped
  • 2/3 cup  mayo
  • 1 small  onion, finely chopped (about 1/2 cup)
  • ½ cup sweet pickle relish
  • 4 tbsp.  prepared mustard
  • Paprika, salt, and black pepper to taste

Southern Potato Egg Salad Instructions:

  1. Boil chopped and salted potatoes in a covered dish for 14 minutes or until until tender. Drain. 
  2. Add onions to bowl, pour hot potatoes over top and allow to set for five minutes.
  3. Add mustard and mix.
  4. In a separate bowl, hand-mix the remaining ingredients.
  5. Gently fold in potatoes and onions.
  6. Add mustard and gently fold again.
