Chik'n, Fig and Mushroom Salad Recipe

Made with fresh figs and embellished with pumpkin seeds, this arugula and Chik'n strip salad is ideal for casual meals.

INGREDIENTS

2 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, minced
2 cups fresh shiitake mushrooms, stems removed
1 package MorningStar Farms® Meal Starters® Chik'n Strips
1 tablespoon olive oil
4 fresh figs, quartered lengthwise*
4 cups torn arugula
1/4 cup raw pumpkin seeds

DIRECTIONS

1. In small bowl whisk together lemon juice, 2 tablespoons oil, basil, salt, pepper and garlic.

2. Cut any large mushroom caps into halves or quarters. Place mushrooms in resealable plastic bag. Drizzle half of the lemon mixture over mushrooms. Let stand at room temperature for 20 minutes.

3. Meanwhile, in large nonstick skillet cook and stir Morningstar Farms® Meal StartersTM Chik'n Strips in 1 tablespoon oil over medium-high heat for 2 to 3 minutes or until heated through. Drizzle with remaining lemon mixture. Stir in figs. Cook and stir about 1 minute more or until heated through. Remove from skillet; keep warm.

4. In same skillet cook and stir mushrooms and marinade about 5 minutes or until softened.

5. In salad bowl toss together arugula, Chik'n Strips mixture and mushroom mixture. Sprinkle with pumpkin seeds. Serve immediately.

*Note: If fresh figs are not available, substitute dried figs.
