Cranberry-Mango Chutney

These appetizers feature Keebler® Club® Original crackers topped with cream cheese and a cranberry- and gingerroot-studded version of mango chutney.

Servings: 12

INGREDIENTS

1/2 cup dried cranberries
1/4 cup water
2 tablespoons sugar
1 tablespoon grated gingerroot
3/4 cup mango chutney
6 ounces reduced-fat cream cheese, softened
Keebler® Club® Original crackers

DIRECTIONS

1. In small saucepan combine cranberries, water, sugar and gingerroot. Bring to boiling. Reduce heat. Simmer, covered, for 5 minutes. Remove lid. Simmer, uncovered, for 1 to 3 minutes more or until most of the liquid evaporates. Remove from heat. Let stand for 5 minutes.

2. Stir chutney into cranberry mixture. Transfer to small bowl. Cover and refrigerate for 2 to 24 hours. 3. To serve, spread cream cheese on KEEBLER CLUB Original crackers. Top with chutney mixture.
