Mediterranean Sweet & Spicy Salad with Greek Vinaigrette Dressing Recipe

A red wine vinaigrette tops this vegetarian, main-dish salad featuring tofu, MorningStar Farms® Meal Starters™ Chik'n Strips, tomato, cucumber, garbanzo beans and olives.

INGREDIENTS


1/3 cup olive oil
1/3 cup red wine vinegar
2 tablespoons honey
2 teaspoons dried oregano leaves
1 tablespoon Dijon mustard
1/8 to 1/4 teaspoon ground red pepper
2 cloves garlic, minced

1 package (8 oz.) MorningStar Farms® Meal Starters® Chik'n Strips
4 ounces firm tofu, drained and cut into 1/2-inch pieces
1 1/2 cups chopped tomato (about 2 medium tomatoes)
1 cup seeded and sliced cucumber
2/3 cup canned garbanzo beans, rinsed and drained
1/2 cup pitted black olives, sliced
1/2 cup chopped red onion
1/3 cup chopped fresh parsley
4 cups torn mixed greens

DIRECTIONS

1. In small bowl whisk together oil, vinegar, honey, oregano, mustard, red pepper and garlic. Set aside.

2. Cook MORNINGSTAR FARMS MEAL STARTERS CHIK'N STRIPS according to package directions.

3. In large bowl toss together tofu, tomato, cucumber, beans, olives, onions and parsley.

4. Arrange greens on 4 serving plates. Top with tofu mixture. Sprinkle with chik'n strips. Whisk oil mixture. Drizzle over each salad. Serve immediately.
