Roasted Sweet Pepper Spread

The sun-kissed flavors of the Mediterranean shine through in this savory pepper spread that starts with purchased roasted red peppers, then adds thyme and cayenne pepper.

INGREDIENTS

2 (12 oz. each) roasted red peppers, drained (12 oz. each) roasted red peppers, drained
1 (6 oz.) tomato paste (6 oz.) tomato paste
1 chopped fresh thyme or 1 teaspoon dried thyme leaves chopped fresh thyme or 1 teaspoon dried thyme leaves
1 olive oil or vegetable oil olive oil or vegetable oil
2 sugar sugar
1 garlic salt garlic salt
1/8 cayenne pepper cayenne pepper
Keebler® Town House® Original crackers Keebler® Town House® Original crackers

DIRECTIONS

1. In blender or food processor place peppers. Cover and process until finely chopped. Add tomato paste, thyme, oil, sugar, garlic salt and cayenne pepper. Cover and process until nearly smooth.

2. Enjoy immediately or refrigerate up to 1 week. Serve with crackers.

I bet this would be great with a tub of soft cream cheese blended in. It think it would be like pimiento spread that you buy in those tiny jars.

I happened to have all the ingredients on hand, so thought I would try this as an alternative to boring salsa. This is certainly more trouble than opening a jar, but well worth it for the taste and freshness.
I made it according to directions, though I did substitute stevia for the sugar, and it was very good. Before putting it in the fridge, I added a tablespoon of lime juice and a dash more cayenne and the flavor really perked up.
