Shrimp Cocktail with Mustard Butter

Whole grain mustard lends a crunchy, slightly spicy flavor contrast to the mildly sweet shrimp topping these crackers.

INGREDIENTS

Ice cubes
4 cups water
1/3 cup sugar
1 teaspoon kosher salt
1 bay leaf
24 peeled and deveined small shrimp
2 tablespoons unsalted butter, softened
2 tablespoons whole grain mustard
24 Keebler® Town House® Original crackers
24 fresh dill sprigs

DIRECTIONS

1. Fill medium bowl with ice cubes. Set aside.

2. In large saucepan bring water, sugar, salt and bay leaf to boiling. Add shrimp. Boil about 2 minutes or until shrimp turn opaque. Drain. Toss shrimp in ice until cold. Remove bay leaf and discard ice. Refrigerate shrimp until needed.

3. In small bowl stir together butter and mustard. Spread on KEEBLER TOWN HOUSE Original crackers. Top each with shrimp and sprig of dill.
