canned black beans, rinsed and drained

shredded cheddar-flavor soy cheese

shredded lettuce
DIRECTIONS
1. In food processor bowl combine salsa and 1/2 cup cilantro. Cover and process until smooth. Set aside.
2. In shallow dish stir together enchilada sauce, 1/4 cup cilantro and cumin. Set aside.
3. In large nonstick skillet cook MORNINGSTAR FARMS GRILLERS VEGAN burgers and onion in hot oil over medium heat for 2 to 3 minutes or until burgers are heated through and onion is tender. Remove from heat. Stir in beans.
4. In 11 x 7 x 2-inch baking dish spread 1/3 cup enchilada sauce mixture. Dip tortillas, one at a time, in remaining enchilada sauce to soften. Spoon burger mixture in center of tortillas. Roll up. Place, seam side down, on top of enchilada sauce in baking dish. Pour any remaining enchilada sauce over tortillas.
5. Cover tightly with foil. Bake at 350°F for 15 minutes. Remove foil. Sprinkle with cheese. Bake at 350°F for 5 to 10 minutes more or until cheese melts and enchiladas are heated through. Serve with shredded lettuce and salsa mixture.
*Note: To thaw, place in microwave and heat for 30 seconds.
