frozen orange juice concentrate, thawed
spicy brown mustard
large tart apple, cored and thinly sliced
(about 2 cups)
torn mixed greens
shredded, cooked chicken or chopped, cooked chicken
sliced green onions
broken walnuts, toasted
crumbled feta cheese or blue cheese
1. In small bowl whisk together orange juice concentrate, oil, vinegar, water, honey, mustard and pepper. Add apple slices to dressing. Toss until apple is coated. Set aside.
2. In large bowl toss together greens, chicken, onions and walnuts (if desired). Pour apple mixture over top. Toss until coated. Arrange on 4 serving plates. Sprinkle with cheese. Serve with KEEBLER CLUB CRACKERS. *Note:
Use leftover cooked, chicken; skinless, rotisserie chicken or cooked chicken from the deli. Make ahead: Prepare dressing, except do not toss with apple. Cover and refrigerate dressing for up to 5 days. Before serving, toss apple with dressing. Continue with salad as directed in step 2 above.
