Turkey Loaf

Meat loaf gets an update when it's made with ground turkey and jerk seasoning. The apricot-mustard glaze adds a perfect finish.

INGREDIENTS

1 egg, slightly beaten
1/2 cup finely chopped celery
1/4 cup sliced green onions
1 tablespoon jerk seasoning
1/2 cup Keebler® Town House® Original crackers
1 1/4 pounds ground turkey
3 tablespoons apricot or peach spreadable fruit
2 tablespoons Dijon mustard

DIRECTIONS

1. In medium bowl combine egg, celery, onions and jerk seasoning. Stir in cracker crumbs. Add turkey. Mix well.

2. In shallow baking pan pat mixture into 8 x 4-inch loaf. Bake at 350°F about 50 minutes or until internal temperature reaches 165°F.

3. Meanwhile, in small bowl stir together spreadable fruit and mustard. Spread over loaf. Bake at 350°F for 10 minutes more. Let stand for 10 minutes before slicing.
