INGREDIENTS
1 package (16 oz.)
whole wheat farfalle (bow-tie) or corkscrew pasta
1/2 cup
part-skim ricotta cheese
1 tablespoon
bottled minced garlic
3 tablespoons
olive oil
1 package (8 oz)
MorningStar Farms® Meal Starters® Chik'n Strips
1 cup
fresh or frozen peas
1/2 teaspoon
salt
1/2 teaspoon
coarse grind black pepper
1 cup
cherry tomatoes (halved)
1 tablespoon
lemon juice
2 teaspoons
grated lemon peel
DIRECTIONS
1. Cook pasta according to package directions. Drain, reserving 1 cup of the cooking liquid. In large bowl toss hot pasta with ricotta cheese. Cover to keep warm.
2. Meanwhile, in large skillet cook garlic in oil for 30 seconds. Stir in MORNINGSTAR FARMS MEAL STARTERS Chik'n Strips, peas, salt and pepper. Cook and stir over medium-high heat for 2 to 3 minutes or until Chik'n Strips are heated through. Add reserved pasta cooking liquid. Cook and stir for 1 minute more or until peas are bright green.
3. Add pea mixture, tomatoes and lemon juice to hot pasta mixture. Toss until combined. Sprinkle with lemon peel.
