Directions
1. Place small scoop of ice cream on bottoms of four of the cookies. Top each with another cookie, bottom side down, slightly pressing cookies together to form "sandwiches". Smooth sides.
2. Wrap each "sandwich" in plastic wrap. Freeze at least 30 minutes or until firm.
3. Let stand at room temperature for 10 minutes before serving.
